Head Chef

Head Chef Salary: £40,000 per annum plus gratuities
Working Hours: Wednesday to Sunday - in line with opening hours
Contract: Permanent
Location: Bicester (live-in accommodation available)

Equation Recruitment are looking for an experienced Head Chef with a passion for food to oversee the running of the kitchen in our beautiful, Bicester based, gastro pub.

Our client's vision and mission are simple; to create an exceptional pub, but to do this we need exceptional individuals. The ideal candidate will come from a similar background and have an in-depth knowledge of Food Safety, Food Allergen and H&S best practises.

Head Chef Responsibilities:

* Be passionate about delivering top quality food.
* Manage labour and schedules according to budget set.
* Ensure consistency and high standards are met in relation to food preparation and cooking;
* Maintaining excellent standards of hygiene and cleaning schedules.
* Recruit, train, and mentor team members.
* Have full ownership of the full stocktake process including stock inwards, stock management and minimise wastage.
* Total control of hygiene including non-conformance.
* To support Chef Apprenticeship programmes and be a close mentor to any individuals completing a Chef Apprenticeship within the pub.
* Ensure all new Chefs have completed their on-line compliancy training prior to their 1st day working in the kitchen contributing to 100% compliancy training rate at all times;
* Following recruitment processes according to company policy and procedures.
* Ensure that work is conducted in a clean and tidy way, monitoring on a continual basis as well as ensuring legislative and government guidelines are adhered to including the Food Safety Act, Health & Safety at Work Act, COSHH and Fire Regulations.

Required Skillset for a Head Chef:

* Previous experience in a Head Chef position is an advantage.
* A strong people manager; able to make positive changes.
* A good understanding of compliance standards including Food Safety
* Experience in managing kitchen equipment maintenance.
* Expert knowledge of allergies and the ability to manage them.
* Ability to lead a team and promote best practice.
* Have a passion to mentor team members and assist in the personal development of the team.
